Is it true that the monk Dom Pérignon invented sparkling champagne wine in the 1600s?
No. Modern reference sources state that the popular tale crediting the monk Dom Pérignon with inventing sparkling champagne is erroneous, and that he was instead charged with removing bubbles from Champagne wines; some scholarship credits the development of strong English glass bottles by Sir Kenelm Digby. Two 19th-century newspaper accounts do repeat the legend that Pérignon discovered champagne around 1663–1670.
