Furthermore, the use of fire, changes in diet, and avoidance of toxins has led to neutral evolution in human bitter sensitivity. This has allowed several loss of function mutations that has led to a reduced sensory capacity towards bitterness in humans when compared to other species. The threshold for stimulation of bitter taste by quinine averages a concentration of 8 μM (8 micromolar). The taste thresholds of other bitter substances are rated relative to quinine, which is thus given a reference index of 1. For example, brucine has an index of 11, is thus perceived as intensely more bitter than quinine, and is detected at a much lower solution threshold. Use of taste repellants and emetics to prevent accidental poisoning of dogs. Twelve taste repellents and 3 oral emetics were tested. The taste repellents were capsaicin, capsicum, oleoresin, sucrose octaacetate, quinine tonic, quassia wood extract, vanillamide, horseradish extract, caffeine, pepperoni enhancer, acorn extract, and commercially available bitter and hot flavors. The emetics tested were: antimony potassium tartrate, apomorphine, and copper sulfate. Intake of a 20% sucrose solution by Beagles was significantly depressed by addition of vanillamide at concentrations greater than 0.001%, by capsicum and capsaicin at concentrations greater than 0.01%, and by horseradish extract, pepperoni enhancer, and a commercially available hot flavor at concentrations greater than 0.1%. Antimony potassium tartrate, when added to the 20% sucrose solution at a concentration of 0.1%, produced emesis as did apomorphine at a concentration of 0.005% and copper sulfate at 1%. When the emetic antimony potassium tartrate was combined with vanillamide in a 20% sucrose solution, intake was reduced to less than 20 ml, and vomiting occurred within 15 minutes.

Bittering agents in the prevention of accidental poisoning: children's reactions to denatonium benzoate (Bitrex). The responses of young children to Denatonium Benzoate (Bitrex) were observed, in order to assess the potential of this bittering agent in the prevention of accidental poisoning. Thirty-three children aged 17-36 months were offered orange juice containing Bitrex (in a concentration of 10 parts per million). Of the 30 children who took some of this juice, only seven were willing to take more than 10 gm. A variety of negative verbal and non-verbal responses were noted. It is suggested that the highly unpalatable nature of Bitrex makes this compound a useful additive that could well prevent accidental poisoning from household products of mild to moderate toxicity.
