This review examines the connection between nutrient absorption and water quality, with a particular emphasis on the effects of water pollution on human health. According to the review, nutrient absorption is greatly impacted by water quality, particularly in groups that are more sensitive. It emphasizes how crucial it is to monitor and control water quality better in order to provide the best possible nutrition and health results. This review synthesizes current research to elucidate the mechanisms through which water quality impacts nutrient absorption and overall nutritional status. Although research into contextual influences on food/beverage choices is increasing, limited knowledge exists about the relative impact context variables and to which degree these factors interact with each other. Habit is also acknowledged as being important in shaping food/beverage choices, but like the influence of context, quantification of its importance is lacking. To contribute to a closing of this gap, we analyse food dairy data from 100+ New Zealand consumers quantitatively with a variance component analysis. Food diaries, recording the eating occasion, beverages and meal food components consumed, location and presence of other persons are suitable for reliably capturing everyday food consumption behaviour in its natural habitat. For the purpose of this presentation, attention was directed to meal centred beverage consumption. Analysis of variance with main and interaction effects was used to examine the contribution of context factors (eating occasion, where, with whom), habit (share of beverage in consumption portfolio) and socio-demographic characteristics (gender, age) to explain the binary choice of seven main beverage types (water, hot beverages, milk, carbonated beverages, juice, wine and beer). Each participant provided 7-20 24-h food recall dairies, hereby making it possible to develop a measure of habit in beverage choice for person*beverage type.
