## Abstract
In exploring the ways in which the 3-Cs (crops, climate and calories) shaped the rise and fall of civilizations, this chapter examines how three crops—wheat, rice and corn—acted as the foundation for most settled societies. The easiest to grow, corn underpinned the pre-Columbian civilizations of the Americas. Although particularly susceptible to drought, the greatest peril associated with corn was its bounty. Capable of supporting many in a small area, corn exposed those who relied on it to a series of brutal “Malthusian traps” in which populations continually rose and crashed. In comparison to corn, rice placed heavy demands on those who grew it. Requiring elaborate irrigation systems if it was to sustain large populations, rice also demanded complex societies capable of sustaining these irrigation systems.
